Café ArtScience is on GAYOT's 2016 Most Adventurous Restaurants.

Café ArtScience in Cambridge is the brainchild of Harvard professor David Edwards, who also founded Le Laboratoire, a cultural center where artists, designers and chefs experiment with new technologies to innovate their respective crafts. The culinary results may even show up on your plate or in your glass. Chef Patrick Campbell's cuisine is also rooted in local ingredients, exemplified in a dish of local head lettuces with fried clams, pickled ramp and buttermilk dressing. The à la carte menu might continue with bison tartare, seared day boat scallops or grilled Vermont quail house boudin blanc. For dessert? Perhaps a milk chocolate mousse with hazelnut praline, espresso gelée and an orange blossom ice cream sphere.
