Talented chef Stéphane Moreau works in this bistro near the Madeleine church. He notably honed his skills with Claude Peyrot who owned a restaurant in the nineties named Le Vivarois. Expect correct seasonings and first-rate products. Cube-shaped salmon marinated with dill and sea salt and served with mango and rice proves an appetizing twist on gravlax. Cooked on the grill, Normandy beef pleases the palate alongside potatoes and slivers of beet. As a finale, tiny sweets such as gingerbread ice cream, crème brûlée and chocolate fondant accompany the coffee. Menu at €35 for lunch and dinner.
