Perhaps one of Leesburg’s most unexpected restaurants, The Cajun Experience is sited in an historic house near the main street of old town. Such is the setting that patrons might expect dainty tea sandwiches or ladylike watercress salads. Not here, where it looks like carnival time and a chef in full Cajun mode pulls out all the seasonings that make this cuisine such a knockout hit. Appetizers such as boudin balls of rice fried with ground pork, an oyster bowl with Cajun spice, and a crayfish pie alert patrons that this is no ordinary menu. Flavorful po’ boys --- a sandwich that all too often is more bread than filling --- come with your choice of oysters, chicken, blackened fish and fried shrimp. Or, if you’d rather, check out the nightly specials or the entrée of crawfish etouffée, an offering of sautéed crawfish with “trinity” seasoning over rice. Sweets include banana pudding, bread pudding and some mighty good beignets.
