THIS RESTAURANT IS TEMPORARILY CLOSED The Californian Restaurant Review: The Californian is truly a gem for the eyes, with its white-washed Mediterranean-style setting, expansive archways, leaping fountains and green-glass tables. Longtime Hyatt properties chef Manfred Lassahn oversees a menu that is full of contemporary dishes featuring artisanal, sustainable ingredients. Start with tempura lobster fries with citrus rémoulade or the goat cheese with romesco, olive oil and sea salt. Mains are highlighted by unique daily features, such as the Chilean sea bass paired with lobster mashed potatoes and a red wine reduction that is offered every Friday. Finding just the right wine match for your meal is easy, as the wine list offers a nice compilation of boutique labels from around the globe. Desserts, too, impress, especially the house-made ice creams and a cheesecake topped with sliced bananas that have been torched brûlée-style.
