Longtime chef Adam Navidi has departed from this resort's The Californian fine dining restaurant. The Californian is truly a gem for the eye with its white-washed Mediterranean-style buildings, expansive archways, leaping fountains, green glass tables and classic California comfort. The menu is still full of adventurous dishes and artisanal ingredients. Start your meal with a warm crab and Boursin cheesecake appetizer with black truffle emulsion or with the cheese platter, which comes with such all-California selections as Fiscalini Farms cheddar, Cypress Grove Humboldt fog, Winchester Farms Gouda and Point Reyes blue. The Chilean sea bass tops the menu and comes paired with lobster-mashed potatoes and a red wine reduction. Finding just the right wine match for your meal is easy as the wine list offers a nice compilation of boutique labels from around the globe. Desserts, too, impress, especially the house-made ice creams and a cheesecake topped with sliced bananas that have been torched brûlée-style.
