Canon Restaurant Review

: This stylish cocktail bar describes its vast collection of spirits as the largest in the Western Hemisphere. A bold claim, until you start leafing through the 90-plus pages listing spirits from near and far. Looking for an obscure absinthe or that Scotch you fell in love with in Tokyo? The savvy staff --- led by bartender Jamie Boudreau --- will track it down as guests relax in the comfortable surroundings, which include a selection of vintage glassware. Tables in the snug space invite quiet conversation, which might focus on the nicely mixed drinks and clever creations on the ever-changing, seasonally-driven menu. Winter warmers range from pan-roasted trout to a porcini risotto cake, or a brisket braised for 48 hours. Come summer, the kitchen showcases tender local greens and local produce. Don't miss the updated Reuben sandwich where horseradish crème fraîche adds a kick to the house-made pastrami. Back to the adult beverages portion of this experience, Canon is blazing trails by carbonating some old-school favorites such as the Corpse Reviver and a Hemingway Daiquiri. But take note: These tasty concoctions go down extra easy.
