Tucked away in the elegant Diamond Hawai'i Resort & Spa, Capische offers a romantic and intimate setting to savor Italian-French cuisine. Chef Brian Etheredge puts a creative spin on dishes, using stylish presentation. Winners include the house special cioppino. The chicken breast stuffed with locally-made goat cheese is creamy and rich alongside caramel peppered carrots. For appetizers, we like the quail saltimbocca, wrapped with apple-smoked bacon and served with pine nut brown butter. The mushroom truffle risotto is also first-rate, and due to the appetizer size, leaves us wanting even more. For pastas, opt for the Bolognese or the shrimp carbonara with house-made pancetta. Dessert offerings include tiramisu and chocolate hazelnut cake, but we enjoy the vanilla crème brûlée martini, served with fresh strawberries in a martini glass. Service is professional, and you’ll appreciate the extensive wine list. For a memorable evening, request one of the nine tables on the terrace at sunset for a beautiful view. Capische also offers Il Teatro, a private dining experience where a chef prepares each course tableside and pairs each with wine---a culinary dinner theater worth experiencing. |
