Tucked away in the elegant Hotel Wailea Maui, Capische offers a romantic and intimate setting to savor the locally informed Northern Italian cuisine created with French technique. The kitchen puts a creative spin on dishes, using stylish presentation, and offerings are seasonal. To start, we like the quail saltimbocca, wrapped with apple-smoked bacon and served with pine nut brown butter. The mushroom truffle risotto is also first-rate, and due to the appetizer size, leaves us wanting even more; the house special cioppino is a winner, too. Meanwhile, chicken is complemented by an olive salad, fennel and a sweet garlic purée. For pastas, opt for the Bolognese. Desserts include a trio of crème brûlées with citrus biscotti, malasadas (donuts) and house-made ice cream sandwiches. Service is professional, and you’ll appreciate the extensive wine list. For a memorable evening, request one of the tables on the lanai at sunset for a beautiful view.
