| After politics and politicians, steaks, dogs and Italian beef, the next meatiest subject in Chicago is barbecued ribs. There is no dearth of good rib places in Chicago, but few are more well-known than Carson's. The interior of its flagship on Wells Street will win no decorating awards---heavy furniture, dark colors---but the consistently good, meaty baby-back ribs are a class act. The barbecue sauce, which locks onto those slabs, gives the ribs a look of molten steel and a taste that is slightly fiery but most pleasing. Crunchy coleslaw and au gratin potatoes are fine accompaniments. There’s a location in Deerfield, too. |
