A hand-painted map of the Caspian Sea pinpointing Azerbaijan, Kazakhstan, Persia, Russia and Turkmenistan---the countries that inspire the food here---stretches across the ceiling like Michelangelos fresco in the Sistine Chapel. To start, get the appetizer sampler of borani (spinach in yogurt), garlicky eggplant and Russian patties, which are like a cross between moussaka and potato-kugel lamb-and-beef dumplings. Nearly everyone orders the fessenjon duck in the sweet-and-sour pomegranate-and-walnut sauce, or one of the unusual kebabs (for example, the quail, Cornish hen or venison).
