Tucked in the chic Santaluz neighborhood, this airy restaurant showcases the cuisine of chef Michael von Euw. The Swiss-born toque studied at Le Cordon Bleu in London, apprenticed at The Capital, also in London, and then became executive chef at Signatures Restaurant of the Seven Seas Mariner. Von Euw has creative flair, so his dishes are well presented and a paean to topnotch ingredients. Pan-roasted wild turbot from the cold waters off Brittany is a tender fish, cradled with truffle gnocchi. Pair it with a Russian River Deloach Pinot Noir, with cherry notes that make music with the line-caught fish. Expect a few classics like escargots or foie gras with du Puy lentils and a quail egg. Scallops nestled on purple cauliflower purée add to the adventure. The wine list is extensive and affordable, featuring a roundup of mostly French and California bottles. Cavaillon is also known for Sunday brunch, where you'll find freshly baked croissants and french toast, and a "traditional" omelet is available if you alert the chef.
