For sushi lovers tired of the same old raw fish concoctions, Chado would like to have a word with you. Or, rather, a bite. Helmed in the kitchen by former Sushi of Gari chef Mike Lim, this Fashion District/Koreatown restaurant has a sushi style all its own: most of the individual pieces of sushi (or as part of the omakase menu) are dotted with a special sauce that Lim creates (in fact, he’s so secretive about the sixty-plus sauces, he makes them in the kitchen before any of the staff arrive). That said, some are easy to figure out: an avocado purée goes nicely dabbed atop a fresh piece of tuna. So does the mustard seed sauce with the chunk of lobster. Meanwhile, more substantial dishes are also available: tender beef short ribs with a garlic-honey sauce, red snapper tartare intermingled with pistachios and Japanese cucumber. The extensive saké list and affordable wines by the glass help wash it all down.
