THIS RESTAURANT IS CLOSED Chez Maitre Paul Restaurant Review: Although it offers the casual comfort and intimacy of a bistro, Chez Maître Paul also possesses the qualities of a polished, sophisticated restaurant---with relatively good value for this increasingly expensive part of town. The menu offers many interesting dishes from the Jura Mountains and Franche-Comté, a region east of Burgundy. Specialties include foie gras marinated with wine, Montbéliard smoked sausage with apples, chicken sautéed with Arbois red wine, and Château-Chalons sweetbreads with morel mushrooms and cancoillotte cheese. And the wine list offers many intriguing, reasonably priced bottles from owner Jean-François Debert's native Franche-Comté.
