Get your empanadas and sea bass en cazuela while they're hot: John Manion's La Sirena Clandestina is open. Baume & Brix has opened its doors in River North, ushering in a multi-culti mix of American, Italian, Japanese, French, Greek and you-name-it large and small plates. Mind you, it has plenty of cred to back it up: Thomas Elliott Bowman (iNG, Otom) and Ben Roche (Moto) are behind the venture, serving up the likes of burrata with bacon-date compote, tatsoi and pepitas. D.A.S. will have its own dining room with an upscale tasting menu, with limited hours and seatings à la EL Ideas. The address has yet to be determined, though Logan Square and Lincoln Park are in the running.

Shin Thompson (partner at Bonsoiree) plans to open Table, Donkey and Stick in the space, after parting ways with Beverly Kim and Johnny Clark. It'll likely open in December and feature a French Alps, Switzerland and Italy inspired menu. Its chef will be selected based on a series of pop-up dinners. Table, Donkey and Stick, 2728 W. Armitage Ave., Chicago, IL 60647, 773-486-7511.

Looking for a proper pint? Some gussied up food to go with? Head to The Drunken Pig in West Rogers Park, a venture from chef/partner Johnny Park (Japonais, Vermilion). Expect some Korean influence as well as dishes like Prince Edward Island mussels, inflected with mustard in garlic confit broth. The Drunken Pig, 5854 N. Lincoln Ave., Chicago, IL 60659, 773-334-3225.

Ryan Poli (Tavernita, Barcito) plans to open Little Market Brasserie in The Talbott Hotel sometime this winter. It'll slip into the PT at the Talbott (former Bice) space, as a partnership with Mercadito Hospitality. French as it sounds, though, American small plates will be on tap, along with bevs from the Tippling Bros. Little Market Brasserie, The Talbott Hotel, 210 E. Delaware Pl., Chicago, IL 60611, 312-640-8135.
