Another winner from chef-owner Jose Garces, Chifa re-creates the quirky hybrid of Peruvian and Cantonese cuisines introduced in Lima by Chinese immigrants in the late nineteenth and early twentieth centuries. Garces, whose growing restaurant holdings include Garces Trading Company, J.G. Domestic, Amada, Tinto and Distrito, traveled to Lima to research the many Chifas there---and his take is both sophisticated and sizzling. Settle into one of the spacious booths---the décor is part sexy opium den, part Latin chic---and sample flavors and ingredients from Asian and Latin cuisines. Try traditional Chifa-style fried rice with chorizo, mango, edamame and scallops; lump crab empanadas with sweet chili reduction; and shaved cucumber or mussels with coconut, lemon grass and Thai basil. The pork belly buns, tea-smoked ribs and scallion pancake are impressive, as is anything from the ceviche bar. Try one of the special cocktails, such as the five-spice rye Manhattan, or for warmer climes, a refreshing mint and lima bean gin fizz.
