Have a seat in one of Chikubu's four tatami rooms upstairs or in its long, sleek dining room and prepare for a wonderful gastronomic experience. Among the surprises that might appear when you say omakase (chef's choice---$80-$120 per person) are a delicious whole raw fish, its flesh chopped tartare-style with scallions and horseradish and then reassembled minus the skin; the Japanese-style paella known as kamamishi, in which vegetables and rice are cooked together and served with chicken or seafood; an exquisite steamed dish of freshwater eel with burdock; filet mignon cooked and served on a hot stone; and a small, grilled whole river fish with a green vinegar sauce. All the desserts are homemade, including the popular aloe jelly.
