In a town where Chinese food often translates to mystery meat in a cornstarch-thickened sauce, China Blossom is a breath of fresh, ginger-scented air, even in its strip-mall location. Some of the best dishes are to be ordered ahead, like the lettuce blossom, tender minced chicken and mushrooms in a garlic-wine sauce, served in a cuplike leaf of frigid iceberg lettuce; expertly-steamed whole fish redolent of fresh herbs and vegetables; or a grand rendition of Peking duck. Many old standards are revitalized in the hands of chef Scott Thomas, who spent 20 years assisting the late chef Paul Fung. The crawfish in spicy lobster sauce is inspired and chock full of sweet shellfish. Beyond the bar at the entrance, two dining rooms exhibit minimal decoration, and table spacing is ideal. The fleet-footed service staff adds to the comfort level.
