| A spartan dining room, replete with white walls, florescent lights and a picture of Mecca, recalls all the ambience of the hutong restaurants inside Beijing's Muslim quarter. Order a dabing---a large sesame pancake the size of a deep-dish pizza---as you sit down. It takes about 15 minutes to make one, and it is the bread for your meal. Look for the lamb and beef dishes. They are the primary meats in the Muslim Halal diet. Try the lamb stir-fried with pickled napa cabbage and lamb with green onions. Chicken in brown sauce is a flash-fry based on sweet bean paste, a typical northern Chinese condiment. The knife-cut noodles are also interesting and fun to eat: they are slippery slivers sliced from a ball of dough that can go either with a soup or as a stir-fry. |
