Hong Kong-raised Tola Chins imprint is on every dish, many of which he introduced to Las Vegas in this popular restaurant fronting the Fashion Show Mall. (Theres a private elevator from the malls underground parking garage, as well as valet parking at its entrance.) Vancouvers award-winning architect Jim Cheng created an airy glass-and-metal beam entrance, and a traditional white-walled dining room with tapestry chairs imported from Italy. The spacious 200-seat Chins is divided into three cozy sections, with a colorful cocktail lounge featuring a bronze bar. Chins creative dishes set it apart from most other Chinese restaurants. The shredded crispy chicken salad and Chins beef are longtime favorites. The strawberry chicken is sublime. Go for the Sedaka special---pieces of lobster tail cooked in lobster sauce and served with fried prawns. Luncheon specialties include a dim sum platter. Chins original crispy pudding is among the irresistible desserts.
