Singapore was once viewed as a staid Asian nation with strict rules. All that changed once the secret got out: its hawker centers were a food lovers’ paradise. And since then restaurants around the world have sprung up to try to replicate them. One such place is Chomp Chomp, chef Simpson Wong’s homage to the cuisine of Singapore. The meaty menu is lengthy, offering up traditional takes on dishes. Some are very good and some are forgettable. In the latter category, the pork belly served with soy garlic and anise was underwhelming. Among the former, the wok-tossed shrimp and Chinese sausage mixed with egg was all flavor. We also recommend the beef-stuffed roti and, for a sweet finish, the chili-flaked banana fritters. Beverages include wine and signature cocktails but this food really warrants a Tiger beer or two to wash it down.
