Stepping into the round, white-upholstered booths of Circadia, looking around at the sparkling strands hanging from the ceiling and opulent chandeliers, the feel reads more Miami than Seattle. But the menu puts those thoughts to rest, reinterpreting Northwest favorites and integrating local ingredients into thoroughly upscale dishes. A take on pho involves pickled mushrooms, kohlrabi noodles and scallops, while a Dungeness crab custard calls to mind Japanese chawanmushi. Order à la carte or opt for an elaborate six-course tasting menu, both of which end with intriguing desserts. Choose from a cheese plate of Taleggio buried in truffles and an Earl Grey soufflé. The wine list is heavily French, with a few forays around Europe and into local territory and skews toward the high-end.
