| An oceanfront fixture, this restaurant in Hotel Laguna known for its shoreline views changed its name to reflect a new sense of culinary exploration that seeks to expand beyond its Euro-Cali roots. The small plates and starters display this progression as classics like Wagyu beef tartare share space with such items as the more adventurous bone marrow risotto. Entrées skew slightly toward the conventional, with lamb shank, bouillabaisse and Scottish salmon. However, there are still plenty of modern motifs to explore: New York steak served with a foie gras custard; bone-in short ribs braised in Chimay and paired with duck fat confit potato. Desserts also exhibit some forward-thinking tendencies, such as in the green tea and chocolate mousse. While the menu’s boundaries have stretched, the wine list featuring more than 200 labels remains as consistent as ever. |
