While not completely authentic, this spot certainly captures the essence of a bustling Madrid tapas bar. Owner Steven Arroyo has created an affordable and festive haunt that draws both from the neighborhood and far beyond. His success can be measured in the sheer numbers of satisfied patrons spilling out of Cobras & Matadors night after night. Although it might be hard to land a table, the wait is usually justified by the meal. The one-page tapas menu includes staples like bacalao cakes with aïoli, Serrano ham croquetas, Galician-style octopus salad and a selection of Spanish cheeses. Other standouts include oven-roasted mussels with Spanish chorizo and anything fired in the wood oven. The wine policy is very consumer-friendly: BYO for a minimal corkage fee or buy a bottle from Arroyo's adjacent wine shop---one with an almost exclusively Spanish inventory---and corkage is waived.
