Dining room at Cobre, Vancouver, canadaSpanish for copper, Cobre in Gastown is named for the copper ceiling scoops radiating from the open kitchen. Begin your evening in the sexy bar, where they muddle gently priced mojitos and Latino-themed cocktails like there’s no mañana. Chef Stuart Irving, who had a Mexican mother-in-law, is a fiesta-fired follower of nuevo Latino and a longtime exponent of tapas dining (consider Wild Rice, Bin 941). From this kitchen he serves up a greatest hits list of the Latin larder---small plates of sprightly seafood ceviches, a comforting oxtail posole, lush Dungeness arepas, and trios of tacos with pulled duck, salmon or pork saddle. Jason Kelly’s hip wine list leans toward the Southern Hemisphere---spot-on pairings for the Latino offerings.
