Coliseum Pool & Grill Restaurant Review: The Resort at Pelican Hill built this more casual restaurant to overlook the resort's impressive Roman-style structure, which just happens to be home to the largest circular pool in the world. Inside, the restaurant pays homage to the pool just outside and the waters of the Pacific beyond with its turquoise accents and sandy whites and beiges. The menu, helmed by chef Micah Severeid, brings contemporary American, California and Italian cuisines to breakfast, lunch and dinner. For breakfast, try the house-made granola or splurge on a Maine lobster scramble. At lunch, you can pick from salads, sandwiches, pastas, flatbreads and gourmet burgers. The menu at dinner features approachable dishes like burgers and flatbreads along with contemporary items like steak frites and scallops served with mascarpone polenta.
