Coliseum Pool & Grill Restaurant Review: The Resort at Pelican Hill built this more casual restaurant to overlook the resort's impressive Roman-style structure, which just happens to be home to the largest circular pool in the world. Inside, the restaurant pays homage to the pool just outside and the waters of the Pacific beyond with its turquoise accents and sandy whites and beiges. The menu, helmed by chef Oscar Fonseca, brings contemporary American, California and Italian cuisines to breakfast, lunch and dinner. For breakfast, try the house-made granola or splurge on a Maine lobster scramble. At lunch, sandwiches, pastas, flatbreads and gourmet burgers are available along with share plates like the New York steak quesadilla and filling greens such as the Tuscan Caesar salad. Dinnertime features approachable dishes --- burgers and flatbreads, barramundi with celeriac purée, Prime New York steak with herb confit pee wee potatoes or chicken curry with mango chutney and naan.
