For all of its sleek accents and modern style, Copeland is a warm and engaging restaurant housed in the landmark Governor Morris hotel. This old-and-new quality is balanced quite nicely on a menu that features American food prepared with classic French technique. Designed by German-trained executive chef Thomas Ciszak, who earned a following at The Manor in West Orange, the menu features seasonal, local produce presented beautifully. Steak lovers may opt for the TC Steak, the TC standing for the chef’s initials, deservedly placed there as he takes this cut from the top prime rib---lush, mellow and tender. It is served with cumin grilled peaches and goat’s milk cheese. Vegetarians can savor dishes such as the eggplant tart with grilled tofu and asparagus. The wine list is extensive and expensive but notable for its carefully chosen vintages from the world’s great wine growing regions. Take note of the dessert wine list where Auslese Cuvée, Alois Kracher, Austria 2006 is recommended as an accompaniment to the almond ice cream. Service is polished.
