Copper Canyon Restaurant Review: Copper Canyon offers a menu of creative Southwestern fare, equal parts spicy, smoky, sweet and sultry. Try the caramelized scallops and chorizo risotto with sautéed leeks and Parmesan, or the chicken and baby spinach tinga tostado made with black beans and complemented by a red chile sauce. Ask about degrees of hotness as some dishes are quite fiery. You can order small plates and taste more --- think ancho grilled baby lamb chops served with mango-pineapple salsa. And, by the way, there are 150 varieties of tequila.
