Copper Canyon Grill Restaurant Review: Copper Canyon Grill carries on a tradition of big, bold flavors in a setting to match. Forget that this is part of a restaurant group: the eatery’s management and kitchen staff pay attention to the details with inventive cooking. Yes, you may find dishes that sound familiar, for who hasn't enjoyed appetizers such as spinach-artichoke dip? Often these are pallid offerings with little oomph --- here the mixture is melded with a generous portion of Monterey Jack cheese. The dippers? Fresh tortilla chips. And roast chicken is ubiquitous, but here the half-roaster is rubbed with 30-plus spices before it cooks over an open wood fire. We also suggest the ribs, but would look as well at the hearty meal-in-one sandwiches, such as the bacon cheeseburger. Alternatively, tuck into the meatloaf. Desserts are a must, especially the Key lime pie, tart-sweet and topped with a mountain of real whipped cream.
