Corton occupies the former home of Montrachet, Drew Nieporent's famed French restaurant in TriBeCa. The dining room features white walls accented with vines and leaves, high ceilings and a light color scheme. Chef Paul Liebrandt, who counts Pierre Gagnaire as a major influence, presents a seasonal tasting menu ($125) as well as a chef's tasting menu ($155). Sweet potato gnocchi is accented with pumpkin seed and Serrano ham consommé. A taste of the sea might follow with “Smoke and Winter” melding cod cheek, mustard, hazelnut and green olive. For main dishes, John Dory may pair up with Winesap apple, Bouchot mussels and bergamot, while the “Calotte de Boeuf” unites oxtail, black birch and young ginger. Desserts have included “Panettone” of chocolate fondant, black sugar sabayon and burnt orange. The French-focused wine list highlights selections from Corton, the largest area of Grand Cru in Burgundy and also the restaurant's namesake. More than a dozen whiskies comprise the bulk of the spirits selection, which also includes Cognac, Armagnac, Calvados, grappa and eau de vie. The overall experience is reminiscent of top tables on the other side of the Atlantic. In fact, the service might be as professional as any of the finest restaurants in France, although it comes off as a bit stiff for this day and age.
