Suzy Crofton’s creative, seasonal American dishes are prepared with flourish --- but the kind that makes sense. The setting, which is just austere enough, doesn’t detract, pointing diners to the artistry on the plate. Crofton can take a simple piece of meat and make it sing with flavor. The pork tenderloin with collard greens, Anson Mills grits, smoked apple chutney and black-eyed peas is one such example of her swagger --- and restraint. The magic she works with vegetables --- take quinoa-corn johnnycakes with fermented black garlic, pickled garlic scapes and corn-cilantro crema --- is on another level altogether. And, most assuredly, you will like the banana cream pie and various fruit tarts that appear now and again throughout the year. The affordable wine list is well thought out (and has some nice half bottles, too), and there’s a fab selection of loose-leaf teas.
