 Surrounded by brick walls, bright lights and the constant hum of people enjoying themselves, Corona del Mar’s The Crow Bar and Kitchen provides a rollicking ambience that emanates a strong sense of cool. Chef John Cuevas has hatched a menu that works in sync with this vibe, as he utilizes simple, local and fresh ingredients to plate items that at once feel familiar and exotic. His dedication to creating subtle, layered flavor profiles through innovative twists is evident in dishes such as the yellowtail crudo with stewed grapes; heirloom tomato salad with charred citrus and goat cheese; halibut with ricotta salata and a kiss of honeycomb; and steak frites served with a tarragon béarnaise. The creativity continues through the end of the meal, highlighted by a grown-up version of s’mores with a graham cracker puff pastry, handmade marshmallow and Nutella. The friendly, knowledgeable staff is fully prepared to guide guests through the adult beverage list---a massive inventory that skews heavily towards artisan domestic and foreign beers, including some special, hard-to-find labels.
