The restaurant’s front-and-center location in a hotel that prides itself on big-time conventions produces its constant buzz. The name is a dead giveaway, and indeed house-cured meats star on the short-but-sweet menu. From potted duck to a house-made pork pâté, guests can select assorted cured meats to pair with an artisanal cheese platter that features some striking selections accompanied by local honey and candied pecans. Want heartier fare? The chef takes great delight in parading a host of comfort foods, from a chicken potpie with puff pastry to a smoked-ham mac ‘n’ cheese that will set you back several calories or so. Desserts are just as all-American homey, with bread pudding and caramelized apple tart among the choices.
