Frozen custard was invented 80 years ago on Coney Island, but with the advent of factory-made ice cream it was rendered obsolete---until now. Alan Silberman reintroduced it to New York in what is now a quickly growing chain. Frozen custard is creamier than ice cream (though somewhat less fattening), and comes in such intense flavors as peach cobbler and crème brûlée as well as chocolate and vanilla.
