Divided into various areas---an airy, bright and crowded front room; a more intimate back room; and a cozy tapas bar upstairs---D.O. is the creation of Madrid-born chef Pablo San Román. He serves refreshing, lighter updates on traditional Spanish cuisine to a well-heeled and well-dressed crowd. Among the best choices are solomillo steak with crystallized garlic, sea bass with a ragoût of asparagus and mussels, roast breast of veal, a notable paella and, on Tuesdays only, cocido, the traditional Madrid stew of pork and garbanzos. There is an extensive list of Spanish wines, served, according to the restaurant, at cost with a corkage fee of about $9 U.S. (Even so, don’t expect many bargains---import duties are high.)
