Since opening in 1975 on the West Village-SoHo border, Da Silvano has evolved into a longstanding celebrity haunt. Most nights you can wander past the cozy trattoria with its exposed brick walls and sidewalk café and recognize a diner nibbling on crostini or feasting on a bowl of pasta. Perhaps it's the mussels in wine sauce, the ever-changing list of pastas (such as fusilli with spicy sausage, string beans, olive oil, grape tomatoes and cream), entrées like braised veal shank with saffron risotto or sides like garlicky broccoli rabe. More likely, it's the ultra-hospitality of owner Silvano Marchetto and the mysterious patina that 30-plus years of fame impart.
