THIS RESTAURANT IS CLOSED Deville Restaurant Review: Located in the luxurious Four Seasons Hotel, Deville is one of Houstons finest dining experiences. The elegant dining room on the third level of the hotel affords a fine view of the grounds of George R. Brown Convention Center and is a worthy showcase for the talents of Executive Chef Tim Keating. Keating embraces the finest culinary elements, seeking out locally grown, seasonally fresh and organically farmed ingredients to create extraordinary French contemporary fare. First course offerings include a superb Maine coldwater lobster risotto with roasted celery root, lobster roe essence and white truffle oil and a wonderful selection of organic salads full of delectable surprises. The Deville steak au poivre is a classic entrée and the sorghum glazed Atlantic salmon with horseradish scented Yukon potatoes, asparagus, beets, Italian capers and Enchiré butter is a stellar choice, too. A seasonal Grand Menu of seven courses is offered as well accompanied by the Chefs on target wine picks. Another way to sample the joys of Deville is by enjoying the Chefs Lunch Express Menu (3 courses for $26) which includes your choice of a fine salad or deliciously complex soup, an equally creative entrée and of course one of Devilles staggeringly wonderful desserts. The wine list, as expected is world class and the service classy and attentive.
