Fronting Monte Carlo’s Strip entrance, this vibrant two-story Mexican-style cantina features a fiesta-like ambience. The centerpiece on each level is a mammoth bar with TV screens. The menu offers traditional south-of-the-border specialties, plus an array of imaginative dishes. Among favorite starters are the baked queso fundido with roasted tomatillo sauce, topped with guacamole; and the chicken tostada salad served in a tortilla bowl with grilled chicken, mixed greens, red cabbage, black beans, cilantro, sour cream and vinaigrette dressing. Diablo's jumbo prime wood-grilled burger, which comes with tomato, lettuce, sliced pickles and Louie sauce, is a winner, as is the carne asada "fajita" sandwich with grilled seasoned steak, sautéed peppers, onions and pepper jack cheese. Among entrée choices, we like the mesquite-grilled salmon with fresh vegetables and green rice, as well as carne asada steak with chipotle-chimichurri marinade. The “ultimate” (huge) brownie banana split is worth the splurge.
