Fronting Monte Carlo’s Strip entrance, this vibrant two-story Mexican-style cantina features a fiesta-like ambience. The centerpiece on each level is a mammoth bar with TV screens. The menu offers traditional south-of-the-border specialties, plus an array of imaginative dishes created by chef Noé Alcalá, who honed his craft at the Hard Rock Hotel’s Pink Taco. Among favorite starters are the crispy smoked jalapeño poppers filled with warm cheese and served with barbecue ranch dipping sauce; Diablo death wings (chicken wings) tossed with mild, medium or XXX-rated hot sauce accompanied by smoked jalapeño blue cheese dipping sauce; and the kitchen sink---aka Cobb---salad with bacon, tomato, avocado, spiced chicken and a choice of dressings. The Diablo, a 15-ounce burger with as many toppings as you can handle, is a winner, as is the marinated steak sandwich with applewood-smoked bacon, roasted tomato and chipotle mayo. Among entrée choices, we like the hickory-grilled salmon with roasted red-skin smashed potatoes; spicy scampi-style jumbo shrimp with lemon-garlic cilantro sauce; tequila-flavored baby-back ribs with crispy onion rings and black pepper coleslaw; and bacon-wrapped filet mignon with roasted corn salsa and crispy potato croquettes. The “ultimate” (huge) brownie banana split is worth the splurge.
