Diablo’s Cantina Restaurant Review

: Fronting Monte Carlo’s Strip entrance, this vibrant two-story Mexican-style cantina features a fiesta-like ambience. The centerpiece on each level is a mammoth bar with TV screens. The menu offers traditional south-of-the-border specialties plus an array of imaginative dishes created by chef Noé Alcalá, who honed his craft at the Hard Rock Hotel’s Pink Taco. Among favorite starters are the traditional baked queso fundido served with roasted tomatillo sauce and topped with guacamole; and the chicken tostada salad served in a tortilla bowl with grilled chicken, mixed greens, red cabbage, black beans, cilantro, sour cream and vinaigrette dressing. Diablo's jumbo prime wood-grilled burger, which comes with tomato, lettuce, sliced pickles and Louie sauce, is a winner, as is the carne asada "fajita" sandwich with grilled seasoned steak, sautéed peppers, onions and pepper jack cheese. Among entrée choices, we like the hickory-grilled salmon with roasted red-skin smashed potatoes; and tequila-flavored baby-back ribs with crispy onion rings and black pepper coleslaw. The “ultimate” (huge) brownie banana split is worth the splurge.
