: Edison bulbs, apple-green ceramics and black metal contrast with expansive white walls and funky seating to create a space that’s both contemporary and retro at the same time. But the protagonists here are clearly the chefs, who blaze through the open kitchen in a flurry. Graduates of the school of Adrià (Catalonia’s gastronomic godfather), Oriol Castro, Eduard Xatruch and Mateu Casañas’ conviction is unshakeable as they create their tasting menus --- the 19-course ‘Disfrutar Menu’ and the 25-course ‘Festival Menu’ --- “where the pursuit of pleasure is the main premise.” Both tasting menus begin with welcome cocktails and appetizers such as melon caipirinhas and candied hazelnuts with elderberry, before moving on to tapas treats of tomato polvorón with pearls of caviaroli Arbequina. More substantial dishes include the anchovies and almond mató with truffle, honey and pine nuts, and the marinated mackerel with porcini mushrooms and cauliflower taboulé. Other notable plates are the razor clams with truffle cream, the mussels with peas, and the red mullet with pork and aubergine gnocchi. Complementing the team’s “pursuit of pleasure” ethos, a delectable wine menu has been created by ex-elBulli sommelier Fernando Centelles. A true connoisseur of Catalan and Spanish wines, he has brought together 170 references that harmonize with the tasting menus. Finish with the fruity delights of crema Catalana with blood orange couscous or the Mandarin with rose-infused jelly, or try the chocolate chillies with mint, olive oil and salt.
