After nearly three decades, Dressel’s was known as a comfortable hangout where the paneled walls are covered with drawings of classical poets, composers and Welsh heroes, but the food wasn’t much to write home about. Well, get the postcards ready, because chef Joe Hemp lit a fire in the kitchen. We recommend the Welsh chips---potato chips, what the Welsh would call crisps---especially with malt vinegar. Sandwiches are improved, and the appetizers pay direct tribute to their British brethren. The stockpot, a stew du jour, remains a favorite. The comfortable upstairs room, the Pub Above, is worth a visit for its resemblance to a British public house. Like those pubs, Dressel’s is now smoke-free. All the better for catching the aromas from a special bar offering (perhaps a local cask IPA) as well as a dozen or so European and craft beers on draft and 35 single-malt Scotches.
