This American café, owned by long-standing River North impresario Barry Bursak, is immensely pleasant. The thrust of the menu is organic (sometimes with a vengeance that sifts down to the coffee beans and the wine). Consider, too, that Earth was constructed with natural materials and non-toxic paints and finishes. However, do not confuse this restaurant with one that is vegetarian, even though vegetables reign supreme. Fish dishes are handled with finesse, and the soup choices always offer flavor for thought. Desserts in this café, with its clean and creative cuisine, are a bit of heaven on earth. Carrot cake, for example, is dense, moist and devilishly delicious. Ditto for the apple pie with its shingled layers of firm yet tender thinly sliced apples rising to fill the space between layers of perfectly flaky pie crust. Service knows what the chef is doing, and the chef knows his stuff.
