Sam Marvin, creator of Los Angeles restaurant Bottega Louie, reintroduced the concept of the steakhouse with Echo & Rig, which originated in Las Vegas. Not-to-be-missed starters include grilled octopus with gigante beans, garlic and green olives; portobello fries with herb aïoli; an “Over the Rainbow” salad with faro, quinoa, corn, asparagus, herbs and Champagne vinaigrette; and fried cauliflower with chile de arbol and crispy shallots. Steaks come in cuts of hanger, rib-eye, skirt, spencer, New York strip and bavette. They are cooked over red oak and served with homemade garlic chips and mushroom Rockefeller. Non-carnivores will appreciate the drunken goat sandwich made with red wine-marinated goat cheese, Brie, cranberry chutney, herbs de Provence, green apple, petite greens and walnut bread. Finish with the caramel turtle sundae with peanut brittle pieces, bourbon sauce, chocolate chunks and salted caramel ice cream.
