ELEMENTS IS CURRENTLY CLOSED FOR RENOVATIONS. The five elements---water, fire, wood, metal and earth---inspire both the décor and the cuisine of this spacious restaurant on the Aladdin's mezzanine level. Feng Shui design principles harmonize such details as wood and stone accents, fire-hued wall sconces and a wall of gently cascading water in the center of the main dining room. Chef de cuisine Mark Reed draws upon the best from land and sea to create an equally harmonious menu. For starters, we like the sautéed lump crab cake with smoked peppers, avocado and fried plantain; the pan-seared Hudson Valley foie gras with red onion jam and baby micro greens; the duet of tuna tartare and carpaccio with lemon vinaigrette; and the pan-roasted sea scallops with horseradish buttered potatoes, chanterelle mushrooms and chive oil. Entrées from the sea include sautéed Alaskan halibut with baby artichokes and roasted lobster oil; grilled Maine lobster with crispy root vegetables; and, for those who just can't decide, the popular mixed grill of crab-stuffed Maine lobster, roasted sea scallops and jumbo prawns. When we've been in a more earth-oriented mood, we've found satisfaction in the herb-crusted rack of Colorado lamb and the wood-grilled filet mignon. We're not sure which element it belongs to, but the Valrhona chocolate peanut butter tart is worth a final splurge, as is a selection from among the 12 dessert wines, three Armagnacs, 20 Cognacs and 15 grappas and digestifs.
