 Nick Silvio and Jeff Petersen knew Kansas Citians would fall, hard, for the Brazilian churrascaria, an all-you-can-eat orgy of meat. Guests can pick and choose from 14 cuts and varieties of meat, from bacon-wrapped turkey and filets to lamb, chicken, Brazilian sausages and provolone-studded prime rib. The bounteous gourmet bar featuring over 30 items is just as enticing. On the short list: the traditional black beans and rice, mashed potatoes, spicy seafood salad, roasted beet and pineapple salad and sushi. Desserts are strictly traditional, including lovely flan and passion fruit mousse. Guests also are plied with cheese-filled biscuits and caramelized bananas (considered a palate-cleanser). A well-rounded wine list includes, appropriately, some nice South American selections. But since this is Brazilian food, pair it with a zippy caipirinha, made with cachaça, a sugarcane spirit. Silvio and Petersen expanded to add a private dining space.
