Culinary expertise and about $5 million combined to create Empress Court, a unique second-story dining palace with a view of Caesars' Garden of the Gods pool area. A colorful aquarium greets guests as they alight from the restaurant's private elevator. Many of the cooks were summoned from Hong Kong to replicate authentic Asian cuisine. Empress Court was the first Nevada restaurant to specialize in serving live fish, which is flown in daily and placed in the kitchen's freshwater and saltwater tanks. The Empress dégustation dinner for two begins with crispy crab claws and seafood wonton soup, followed by sautéed prawns served with walnuts and fresh fruit. Stir-fried Prime sirloin and chicken with oyster sauce, vegetables and Four Seasons seafood fried rice precede green tea ice cream. For three or four people, add Peking duck; for five or more add lobster Cantonese. Among savory à la carte appetizers, we like the rainbow shrimp toast and the spare ribs. Soups include sweet creamed corn with tofu. A variety of shark's fin, bird's nest and abalone dishes are offered, as well as rice, noodles, tofu and vegetable choices. Carnivores like the orange blossom pork loin chop. Save room for the chocolate-filled crispy-fried banana.
