Eric’s, named for the son of hotelier Conrad Hilton, is the in-house restaurant for the Hilton University of Houston and a training ground for the college’s culinary students. The cuisine, mostly American with a touch of Mediterranean, is composed with locally sourced ingredients. Highlights include the Gulf crab cakes topped with tomato and artichoke balsamic reduction served with citrus white bean relish, and the 12-ounce grilled rib-eye with an onion-bourbon demi-glaze. Wines are nothing spectacular, but there’s a full bar and some good desserts.
