ETC. Restaurant Review

: Bernard Pinaud (a former second of chef Christian Le Squer) is at the stoves of ETC (Epicurean Traditional Cuisine), preparing an admirable fare, balanced between classicism and innovation. Indeed, a great knack is needed to deliver dishes so refined, surprising with their original textures and marriage of flavors. As a result, we recommend the “fantaisie voyageuse terre et mer” --- a stuffing of chicken liver and lamb's foot wrapped in smoked haddock ribbons. Crispy Thai-style prawns, mackerel with horseradish and beets, and cod with chorizo, squid and coco de Paimpol are delightful and technically impeccable. The signature dish, an iced blood pudding cut in dices and served with passion fruit juice, emulsified potato purée and a compote of white onions from Cévennes, has won a reputation. Wintertime brings traditional dishes such as pot-au-feu and pigs' cheeks. Cooking times are fine and service is professional. This is “haute cuisine” at a bargain price in a chic bistro décor. The lunch menu costs €50. À la carte, €90.
