THIS RESTAURANT IS CLOSED Etienne Jaulin's Townhouse Restaurant Restaurant Review: Parisian chef Etienne Jaulin is an artist with a hearty appetite, as is apparent by noting some of his menu favorites: elk with wild mushrooms and fried oysters, and Texas deer with huckleberry sauce and bean fries. Those with lighter appetites might go for salmon in bouillabaisse sauce with mussels and clams, or almond-crusted grouper in lemon-garlic sauce. Jaulin also packs them in for his surprise five-course dinner. Its $55 per person and the whole table needs to be up to playing the gourmet game.
