Jennifer Jasinski, of Denver's Rioja and Bistro Vendôme, has another winner with Euclid Hall Bar & Kitchen. This upscale American tavern hustles a seriously impressive menu, executed by chef Jorel Pierce, of house-made, hand-cranked sausages; poutines, including a version with grilled and braised beef, Bordeaux gravy and Wisconsin cheddar curds; chicken with sourdough waffles and pure maple syrup; crispy sweetbreads; and seared Muscovy duck foie gras elevated by Kennebec fries, kimchi and swipes of hoisin sauce. And when it comes time for a sugar high, the kitchen delivers in spades, turning out pretzel fried pies and a sourdough waffle ice cream sandwich with salted butternut ice cream. The culinary cognoscenti slide up to the chef's counter to get the best views of the exhibition kitchen, while the tables along the windowed walls, both upstairs and down, are privy to sweeping views of the Rocky Mountains. We covet the craft beer menu, which proffers serious brews---everything from Old Speckled Hen to the Lost Abbey Lost and Found. And both the well-priced wine list and innovative cocktail roster have inherited the same degree of thoughtfulness.
