Among Fiore's unique features are the small footstools next to each lady's chair for her purse and the cigar terrace overlooking the resort's pool and Ipanema beach. The basket of tasty bread fresh from the resort's bakery includes rye, sourdough and jalapeño-cheddar. The cappuccino of lobster bisque is laced with Dry Sack sherry and tarragon topped with freshly whipped cream. The Roquefort-glazed escargot with wild mushrooms is served in puff pastry. Sorbet splashed with Champagne precedes specialties such as seared day boat scallops Provençal with creamy polenta. The slow-braised lamb shank is garnished with toasted garlic orzo and watercress. The certified Angus beef is broiled over a blend of aged mesquite and olive woods---gourmands will like the 18-ounce rib-eye chop and the 20-ounce bone-in sirloin au poivre. Save room for the warm apple tart with Calvados custard, caramel sauce, mascarpone ice cream and an apple chip or the chocolate soufflé with white chocolate sauce.
