Fleming's Prime Steakhouse & Wine Bar Restaurant Review:

About the restaurant: Founded by restaurateur Paul Fleming --- the original P.F. in P.F. Chang's --- and William Allen, III, this steakhouse chain distinguishes itself with its top-quality meats and notable wine program.

Food & Drinks: This outpost has two wine lists, the one that’s provided separately with your menu, featuring numerous hard-to-find American boutique wines as well as national and international labels, but at exceptionally high prices; the corporate wine list in the back of the main menu contains less expensive wines. More than 100 wines are offered by the glass, and the cellar boasts an 80-label reserve list. The USDA Prime hand-cut beef includes rib-eyes, filets and New York strips, all seared by intensely high-heat cooking, resulting in the signature steakhouse outer crust. Sides run the gamut from onion rings with smoked jalapeño aïoli to a chilled wedge of iceberg lettuce with grape tomatoes, red onion and blue cheese dressing. Seafood, too, is well thought out, be it Australian lobster tails, tuna mignon with tomato-sherry vinaigrette, or the tower-of-seafood appetizer the waiters often encourage you to add to your meal. The constant up-selling can be a bit trying, and the location clearly gears towards expense accounts. Finish with a familiar dessert: cheesecake, chocolate lava cake or crème brûlée.
