Presided over by Olivier Flottes, this brasserie behind the Hôtel de Crillon pays tribute to the Aveyron region with its tête de veau, roasted chicken, meats of Salers, saucisse à l'aligot and oyster bar. Other items on the menu include onion soup, Burgundy snails, duck foie gras, sole meunière and rib steak with béarnaise sauce. Crème brûlée with Bourbon vanilla and rice pudding are available, too. Add to all this a beautiful investment in the wine cellar, which is very much appreciated by Parisians.
