Luciano Del Signore took over from his father several years ago when he was 25, and he has steadily upgraded the airy restaurant both physically and menu-wise. He has a from-scratch kitchen that bakes bread every day and prepares the authentic Italian dishes to order on a menu that changes with the seasons. His style is typified by the simplest of dishes: scallops of veal sautéed in lemon, butter, white wine and fresh parsley, more telling of his meticulous approach than a more complicated dish. Trips to Italy each year keep him in touch with what chefs in that country are doing. Pastas abound, of course, including cavatelli in cream sauce enlivened with wild mushrooms and spaghetti teamed with shellfish. Salmon grilled with peppers and tomatoes in olive oil and balsamic vinegar is one of several seafood dishes. Service is knowledgeable and courteous. A 400-bottle Italian wine cellar offers the necessary accompaniment.
